"Loukoumades" (لقمة القاضي/ زلابية)

Loukoumades (لقمة القاضي) is a type of dessert, which is well known in the Middle East. It's completely different than all other pastries and that's what makes it so special!!




Ingredients needed:

1 filled cup of flour.
3/4 cup water.
1 tsp dry yeast.
1/2 tsp sugar.
1 boiled potato.
Oil for frying.

Ingredients of Syrup:

1 cup sugar.
1/2 cup water.
1/2 lemon.

Directions:
  1. Put 1 tsp yeast, 1/2 tsp sugar and add some water (just a few drops) then cover the cup with a plate for minimum 15 minutes.
  2. Boil 1 peeled potato until very tender.
  3. In a bowl mix 1 filled cup of flour and 3/4 cup water then add the yeast sugar mixture.
  4. Mash the potato with 3 tbsp water then add to the previous mixture and stir everything together.
  5. Cover the bowl for approximately 2 hours.
  6. Heat the oil on medium high in a deep sauce pan. The oil should be at least up to the middle of the pan.
  7. When the oil boils, start frying. With a tsp take some from the mixture and drop it in the oil carefully. When golden fried, remove and put on paper towel. (Like frying french fries)
Preparing the syrup:
  • In a sauce pan, add 1 cup sugar and 1/2 cup water. The stove heat should be medium high.
  • Keep stirring until sugar is completely dissolved.
  • At the end squeeze 1/2 lemon and stir again for 2 minutes then remove aside.
Tip:
Syrup should be poured over the Loukoumades. But one should be hot and the other is cold.
Depends on which one u prepared first.
You can also sprinkle some powdered sugar on top of it.
