Ingredients needed:
1 eye round roast beef.
2 tbsp vinegar.
2 tsp minced garlic.
1 tbsp corn oil.
10 thin garlic cloves.
Salt, Pepper & All Spice.
1/2 tsp Cinnamon.
Natural string of cotton or linen to tie the beef.
1 additional minced onion for frying the roast beef.
Directions:
- Remove all the fats from the beef.
- With a knife, cut deep slits in the beef and bury a garlic clove. Space them evenly over the roast.
- Tie the beef with the string and leave it in this seasoning for not less than 4 hours.
- We add oil in a large pan and fry 1 minced onion until it becomes lightly yellow.
- Fry the roast beef from each side until it's lightly brown.
- Add water to cover at least half the roast beef and cover.
- You can continue cooking over the stove on medium heat, or put all in preheated oven over 375 degrees.
- It would take about 3 hours to cook, depending on the Beef's size.
- After an hour and a half, uncover and turn the beef on the other side.
- Check with a fork if fully cooked.
- Cut in thins slices after it cools down!
- You can use remaining sauce in the pan as a gravy.
- After 1 hour and 1/2 and while it's cooking, you can add baby carrots, baby red potatoes (unpeeled), and 2 zucchinis cut into cubes (unpeeled) to the roast beef.
