"Pizza" (بيتزا)

Who resists Pizza? No one I guess!
We offer here the recipe from scratch, this means the recipe for dough too!
Our pizza recipe is very useful for vegetarians or people fasting.






Ingredients needed for the dough:

2 overfilled cups flour.
1/4 cup corn oil.
2/3 cup warm milk.
1 tsp dry yeast. (خميرة)
Salt.


Ingredients needed for the topping:

Tomato paste.
1 green pepper (thin sliced).
1 tomato (thin sliced).
1 small can of sliced mushrooms.
1 small can of sliced black olives.
1 small can of sliced green olives.
1 can tuna (225 gm).
1 1/2 tsp crushed garlic.
Vinegar.
Thyme.
Salt & Pepper.


Directions for the dough:
  1. Start by preparing the dough, because it needs about 45 minutes to stay covered, before spreading it in a Pizza pan.
  2. In a big bowl, pour 1/4 cup corn oil, 2/3 cup warm milk, 1/2 tsp sugar, 1 tsp yeast, 2 small sprinkles of salt and mix all well.
  3. Slowly start adding bit by bit the flour, like a 1/4 cup of flour then mix with your hand, and so on until you add all of the flour.
  4. At the end, the dough mustn't feel sticky at all. So if it needs more flour just add some more.
  5. The dough must be kneaded well. Cover it and put it in a warm place, like for example next to the stove.
  6. After at least 45 minutes, uncover the bowl and start preparing the pizza.

Directions for tomato sauce:
  1. In a sauce pan pour some oil and fry 1 1/2 tsp crushed garlic on a medium heat.
  2. When the garlic turns  yellow, pour 2 tbsp vinegar and stir.
  3. Add 4 tbsp tomato paste, stir then add some water and stir again.
  4. Season by salt, pepper and a sprinkle of thyme.
  5. Keep stirring until it starts boiling then remove.
  6. This sauce has to be thick!

Directions for the pizza:
  1. Start preheating your oven to 350 F!
  2. Sprinkle some flour on a counter or a table and with a rolling pin, spread the dough from both sides.
  3. Brush the pizza pan with some oil (not too much) then put the dough in it.
  4. Sprinkle some thyme on the dough.
  5. Spread the tomato sauce with a brush.
  6. First add a can of tuna (seasoned ahead with salt, pepper, 1 lemon and few drops of vinegar) all over the pizza.
  7. Add the black and green olives, mushrooms, then the tomato slices and at last the green pepper slices.
  8. If you want it vegetarian, now you're done and ready to put it in the oven.
  9. If you want cheese, you can add shredded mozzarella cheese on top, then put it in the oven.

Tip:
  • It would take about 20 minutes in oven (middle rack). Check by inserting a knife in the dough, if the knife comes out clean, then it's fully baked.
  • You can choose any kind of topping you want for your pizza!!
  • For vegetarians, or people who are fasting, you can use coffee mate (the liquid) instead of milk. If you have only the powder creamer, you can prepare it as following: Dissolve 3 tbsp creamer in 1 cup of warm water. (use only 2/3 of the cup for this dough!)
