Such an irresistable extra delicious dish!
Ingredients needed:
1 kg onions then mince it.
Raisins.
Ghee.
1 medium onion.
Salt and Pepper.
1 orange.
1 lemon.
1 tbsp tomato paste.
Oil.
Cardamom and gum mastic. (حبهان و مستكة)
We have to prepare 2 things in order to get our dish.
First the stuffing, then the dressing.
Directions to prepare the Stuffing:
- Mince 1 kg of onions and fry it in 3 tbsp ghee in a skillet on medium high heat.
- Keep stirring until the onions become brown.
- At the end add some raisins (not too many), season with salt and pepper and stir again, then remove from stove.
Directions to prepare the dressing:
- Squeeze 1 orange, 1 lemon, add 1 tbsp tomato paste, 5 tbsp oil.
- Season with salt and pepper and mix all well.
Directions to cook the duck:
- Boil water in a big pot, add 1 onion, 3 cardamom, and 3 gum mastic. (حبهان و مستكة)
- Rub the duck inside outside with flour and salt, then wash with water.
- Stuff the duck with the minced onions.
- Stitch it at the neck and at the bottom.
- When water gets to boiling, add the duck and half cover it with the lid.
- It would take 1 hour on a medium heat. Remove when it's fully cooked. You can check by inserting a knife in the meat, if it still releases water out, then it's not yet fully done.
- Preheat the oven on 375 F.
- Remove Duck when it's fully cooked from pot and put in a baking dish (Pyrex) and brush it from all sides with the dressing.
- Put in oven uncovered and check after 15-20 minutes, if the side facing up is brownish and fried, then turn it on the other side for another 15 minutes.
- At last remove from oven and cut the duck in the middle from neck going down to its bottom.
- Get the stuffing out and put in a serving side dish. You can also put it in the middle of a big serving dish and cut the duck into 4 quarters and put the quarters around the stuffing.
Tip:
The onion stuffing gives the duck-meat a very delicious taste!
We can use the duck's soup in making "Molokheyya".
