"Veal Liver" (كبدة بتلو)

Veal Liver is a common dish in Egypt.
It's also nutritious, because it's full of iron.




Ingredients needed:

Veal Liver (4 slices).
Flour.
Salt.
3/4 tsp Cumin.
1 1/2 tsp minced garlic.
1 lemon.
1 tbsp Ghee.


Directions:
  1. Rub the liver with salt and flour then rinse with cold water.
  2. Season with salt, 3/4 tsp cumin, 1 1/2 tsp minced garlic and 1 squeezed lemon.
  3. Leave in seasoning for about 1 hour.
  4. Heat 1 tbsp Ghee in a big skillet, then fry both sides of the liver on high heat.
  5. Decrease heat  to low-medium, if needed u can add very little water so it doesn't burn and have some sauce.
  6. You can check if it's done with inserting a fork in the meat.
  7. When fully cooked remove from stove.

Tip:
Some like to add an onion, cut into rings. Others like to add thin slices of a green pepper, while frying.
In that case, you would better start frying the onion and green pepper before adding the liver.
Usually when it's cooked with onion and green pepper, we cut first the liver into small cubes.
