This is a double recipe.
We'll be giving a recipe for the chicken soup & then a recipe on how to fry the boiled chicken.

Ingredients needed:
1 whole chicken.
1 medium onion.
3 cardamoms (حبهان).
2 gum mastic (مستكة).
2 Bay leaves (ورق لورا).
Salt.
Flour.
Vinegar.
1 tbsp tomato paste.
2-3 lemons.

Ingredients needed:
1 whole chicken.
1 medium onion.
3 cardamoms (حبهان).
2 gum mastic (مستكة).
2 Bay leaves (ورق لورا).
Salt.
Flour.
Vinegar.
1 tbsp tomato paste.
2-3 lemons.
Directions:
- Rub chicken with salt and flour from inside and outside then rinse well with water.
- Soak in a bowl with cold water and some vinegar for 15 minutes. Then rinse well.
- Boil water in a pot and add to it 1 peeled onion, 3 cardamoms, 2 gum mastic, 2 bay leaves and cover.
- When the water boils, reduce heat to medium, put the chicken in, and half cover the pot.
- The water should just cover the chicken with 1 inch.
- it would take about 40 minutes until it's fully cooked.
- Check by inserting a knife in the chicken, if you didn't get any water out of it, then it's done.
- Remove from pot.
- Also remove and throw away the onion, cardamoms and bay leaves.
- Season with salt and squeeze 2-3 lemons (according to your taste) and stir
- Let it boil for 2 minutes, then remove from stove.
- Preheat oven to 425 F.
- Brush the chicken from all sides with 1 tbsp tomato paste, some corn oil, salt and pepper.
- Put in a baking dish then in oven.
- After approximately 10 minutes, check on it, if the surface is fried, then turn it on the other side for other 10 minutes or less.
- Remove from oven when it's completely fried as in the above picture.
