"Chicken Soup & Oven-Fried Chicken" (شوربة فراخ و فراخ محمرة في الفرن)

This is a double recipe.
We'll be giving a recipe for the chicken soup & then a recipe on how to fry the boiled chicken.
So enjoy!




Ingredients needed:

1 whole chicken.
1 medium onion.
3 cardamoms (حبهان).
2 gum mastic (مستكة).
2 Bay leaves (ورق لورا).
Salt.
Flour.
Vinegar.
1 tbsp tomato paste.
2-3 lemons.

Directions:
  1. Rub chicken with salt and flour from inside and outside then rinse well with water.
  2. Soak in a bowl with cold water and some vinegar for 15 minutes. Then rinse well.
  3. Boil water in a pot and add to it 1 peeled onion, 3 cardamoms, 2 gum mastic, 2 bay leaves and cover.
  4. When the water boils, reduce heat to medium, put the chicken in, and half cover the pot.
  5. The water should just cover the chicken with 1 inch.
  6. it would take about 40 minutes until it's fully cooked.
  7. Check by inserting a knife in the chicken, if you didn't get any water out of it, then it's done.
  8. Remove from pot.
  9. Also remove and throw away the onion, cardamoms and bay leaves.
  10. Season with salt and squeeze 2-3 lemons (according to your taste) and stir
  11. Let it boil for 2 minutes, then remove from stove.


Directions for the Oven Fried Chicken:
  1. Preheat oven to 425 F.
  2. Brush the chicken from all sides with 1 tbsp tomato paste, some corn oil, salt and pepper.
  3. Put in a baking dish then in oven.
  4. After approximately 10 minutes, check on it, if the surface is fried, then turn it on the other side for other 10 minutes or less.
  5. Remove from oven when it's completely fried as in the above picture.
