"Rice with Shrimp" (أرز بالجمبري)

Rice with Shrimp is different than the Shrimp fried Rice!
It's so delicious, that you can have it not only as a side dish, but you can also eat it on its own!
I'm sure you will like it.




Ingredients needed:

1 cup washed rice.
1/2 lb of peeled shrimp.
1/2 minced carrot.
1/2 green pepper cut into very small cubes.
1 small minced onion.
1 lemon.
3/4 tsp cumin.
Salt & pepper.
1/2 tsp tomato paste.
2 tbsp flour.


Directions:
  1. Rub peeled shrimp with salt and some flour, then rinse well with water.
  2. Put shrimp in a bowl and squeeze over 1 lemon and leave it for 1/2 hour at least.
  3. In a  nonstick pot pour some oil, fry the minced onion until dark brown on medium heat.
  4. Add 1/2 minced carrot and 1/2 green pepper that is cut into very small cubes and stir.
  5. Then add the shrimp and season with salt, pepper and cumin.
  6. The shrimp will let water out, keep stirring until the water disappears.
  7. Pour in the water for the rice (according to the kind of rice you're cooking) and 1/2 tsp tomato paste.
  8. Stir all again and increase the heat until it boils.
  9. When it boils, add the rice then stir and cover.
  10. Lower heat to medium again.
  11. When the water becomes exactly in the same level of rice, decrease the heat to low.
  12. Remove from heat when rice is fully cooked. Usually it takes about 25 minutes.
Tip:

It's very important that you don't add the water for rice before all the water of shrimp disappears!

"Italian Sausage"

This is a recipe which doesn't take time in preparation nor cooking.




Ingredients needed:

1 packet of 8 italian sausage (hot or sweet or mixed of both).
1 green pepper cut into slices.
1/2 red pepper cut into slices.
1 onion cut into slices.
3 minced garlic cloves.
Italian seasoning (optional).
Salt and pepper.
Olive Oil.


Directions:
  1. Cut sausages  into pieces.
  2. Cut the slices of green, red pepper, and onion into pieces.
  3. Pour about 2 tbsp olive oil in a large skillet (fry pan) on a medium heat.
  4. Fry the 3 minced garlic cloves, add the peppers and onion and sprinkle some salt, pepper, and italian seasoning.
  5. Stir all until they start to get tender.
  6. Add the sausages and stir, so they're fried from all sides.
  7. After that you can cover the skillet for a while, until the sausages are done.
  8. Usually it takes about 10-15 minutes.

Tip:

We can prepare mashed potatoes as a side dish, or spanish rice.

"Calamari Casserole" (طاجن كالماري)

Dear seafood lovers, today we'll have a very delicious Calamari recipe.
It's baked in oven, to spare the frying smell and also it's a kind of change, than eating it fried as an appetizer !



Ingredients needed:

5 whole calamaris, cut into rings.
1 sliced tomato.
1 sliced onion.
Some chopped parsley.
1 tsp minced garlic.
2 tsp tomato paste.
Salt, Pepper.
Flour.
1 lemon.
1 tbsp oil.


Directions:
  1. Preheat oven to 350F.
  2. Clean calamari from inside and outside by rubbing it well with flour then rinse, then rub it with salt then rinse again.
  3. Inside the calamari there is like a thin plastic body, you have to get it out.
  4. Cut into rings.
  5. Season with salt, pepper, and 1 tsp minced garlic for 1 hour.
  6. Put the calamari rings in a baking dish then squeeze over 1 lemon.
  7. Sprinkle some chopped parsley on the top.
  8. Add tomato and onion slices on the surface.
  9. In a sauce pan pour 1 tbsp oil, add 2 tsp tomato paste, make thinner by adding 1/2 cup water (or more) and stir.
  10. Add salt and pepper then stir again.
  11. Pour sauce over the whole dish.
  12. Cover the dish with foil and put in oven for 45 minutes or until fully cooked.
  13. Check by tasting a calamari ring.

"Tahini" (طحينة)

Tahini is considered a type of Dip or a Dressing.
It's always useful next to grilled dishes, or seafood as a side dressing.
Tahini is very common next to vegetarian dishes like "Foul" or "Falafel" too!
You can also eat it as a dip with pita bread.




Ingredients needed:

1/2 cup Tahini.
2 tsp minced garlic.
2 1/2 lemon.
1 filled tbsp vinegar.
3/4 tbsp salt.
1/2 tsp pepper.
1 tbsp cumin.


Directions:
  1. Pour 1/2 cup tahini in a bowl and mix with 2 tsp minced garlic.
  2. Squeeze over 2 1/2 lemon.
  3. Add 1 filled tbsp vinegar.
  4. Season with 3/4 tbsp salt, 1/2 tsp pepper, and 1 tbsp cumin.
  5. Stir all and taste, you can add more lemon or cumin, according to your taste!
  6. At last you can decorate it with some parsley leaves on top.

"Chicken Soup & Oven-Fried Chicken" (شوربة فراخ و فراخ محمرة في الفرن)

This is a double recipe.
We'll be giving a recipe for the chicken soup & then a recipe on how to fry the boiled chicken.
So enjoy!




Ingredients needed:

1 whole chicken.
1 medium onion.
3 cardamoms (حبهان).
2 gum mastic (مستكة).
2 Bay leaves (ورق لورا).
Salt.
Flour.
Vinegar.
1 tbsp tomato paste.
2-3 lemons.

Directions:
  1. Rub chicken with salt and flour from inside and outside then rinse well with water.
  2. Soak in a bowl with cold water and some vinegar for 15 minutes. Then rinse well.
  3. Boil water in a pot and add to it 1 peeled onion, 3 cardamoms, 2 gum mastic, 2 bay leaves and cover.
  4. When the water boils, reduce heat to medium, put the chicken in, and half cover the pot.
  5. The water should just cover the chicken with 1 inch.
  6. it would take about 40 minutes until it's fully cooked.
  7. Check by inserting a knife in the chicken, if you didn't get any water out of it, then it's done.
  8. Remove from pot.
  9. Also remove and throw away the onion, cardamoms and bay leaves.
  10. Season with salt and squeeze 2-3 lemons (according to your taste) and stir
  11. Let it boil for 2 minutes, then remove from stove.


Directions for the Oven Fried Chicken:
  1. Preheat oven to 425 F.
  2. Brush the chicken from all sides with 1 tbsp tomato paste, some corn oil, salt and pepper.
  3. Put in a baking dish then in oven.
  4. After approximately 10 minutes, check on it, if the surface is fried, then turn it on the other side for other 10 minutes or less.
  5. Remove from oven when it's completely fried as in the above picture.

"Chicken Pie" (فطيرة الفراخ)

This is a very delicious recipe, which contains lots of nutritious ingredients.
It contains vegetables, chicken, milk, and cheese.
Let us see how we can prepare such a dish.




This dish is prepared on 3 stages:
  1. Boil the chicken, after cleaning and washing it using flour and salt.
  2. Prepare the bechamel in a big nonstick pot.
  3. Boil the vegetables for 15 minutes on high heat (don't overcook it).
  4. Prepare the dough.

Ingredients needed for the stuffing:

250 gm of mixed vegetables (the frozen bags which contains, peas, corn and carrots).
1 boiled Cornish hen.
1/2 of a small can of sliced black olives.
1/2 of a small can of sliced green olives.


Ingredients needed for the bechamel:

5 overfilled tbsp flour.
4 cups milk.
1/4 cup grated romano cheese.
1 overfilled tbsp Ghee.
Salt & pepper.

  • Directions of preparing the bechamel is in the "Macaroni Bechamel recipe".
  • Ingredients and directions of the dough are in the "Pizza recipe".
  • Both are found in our blog!
Directions:
  1. Preheat oven to 350 F.
  2. After preparing all previous, remove bones and cut the chicken into medium thick slices.
  3. Strain the boiled vegetables.
  4. Add the chicken, vegetables, black and green sliced olives to the bechamel and stir.
  5. Divide the dough into 2 equal parts. One will be used as a bottom and the other as a top for the pie. Spread both parts.
  6. Brush the oven dish (stone or pyrex dish)  with oil and spread the bottom part in it.
  7. Pour the bechamel mix over it (don't overfill it).
  8. Then cover it with the other dough part on top.
  9. Heat about 2 tbsp oil on high heat then brush the surface of the dough with it.
  10. Put in oven in a lower rack for 20 minutes.
  11. Then transfer to the middle rack for 5-8 minutes until the surface becomes golden brown and fully baked.
  12. Check by inserting a knife in the dough, if it comes out clean then it's done.






It's a recipe with many steps, but once you taste it, you won't regret doing that delicious pie!

"Potato Salad" (سلطة البطاطس)

One of my favourite recipes!
I always like to prepare it next to anything I grill.




Ingredients needed:

3 large potatoes.
1 green pepper.
1 red onion.
1/2 bunch of parsley.
1 small can of sliced black olives.
2 small cans of tuna (225gm/each).
3 lemons.
Vinegar.
Oil.
1 tbsp mustard.
Salt & pepper.
1 boiled egg cut into thin slices.


Directions:
  1. You can either peel the potatoes before or after you boil them. Most important thing is that you don't overcook them.
  2. Cut then the unpeeled potatoes into cubes (not too small).
  3. Chop 1/2 bunch of parsley.
  4. Cut 1 red onion and 1 green pepper into small cubes.
  5. In a big bowl put the potatoes, onion, green pepper, the parsley and pour over the black olives.
  6. In another bowl, season the 2 cans of tuna with 2 lemon juice, vinegar (about 1 tbsp), salt and pepper.
  7. Then add the tuna to the potato salad.
  8. Add 2 tbsp mustard and another sprinkle of salt and pepper.
  9. Now you can pour some oil (olive or corn) over the salad, it makes it easier in stirring!
  10. Taste it, sometimes it needs a third lemon! If so then squeeze it over and stir all again.
  11. At the end you can cut a boiled egg into thin slices and decorate the surface of the salad.
  12. Some parsley leaves on top would make it look ever nicer.

"Pizza" (بيتزا)

Who resists Pizza? No one I guess!
We offer here the recipe from scratch, this means the recipe for dough too!
Our pizza recipe is very useful for vegetarians or people fasting.






Ingredients needed for the dough:

2 overfilled cups flour.
1/4 cup corn oil.
2/3 cup warm milk.
1 tsp dry yeast. (خميرة)
Salt.


Ingredients needed for the topping:

Tomato paste.
1 green pepper (thin sliced).
1 tomato (thin sliced).
1 small can of sliced mushrooms.
1 small can of sliced black olives.
1 small can of sliced green olives.
1 can tuna (225 gm).
1 1/2 tsp crushed garlic.
Vinegar.
Thyme.
Salt & Pepper.


Directions for the dough:
  1. Start by preparing the dough, because it needs about 45 minutes to stay covered, before spreading it in a Pizza pan.
  2. In a big bowl, pour 1/4 cup corn oil, 2/3 cup warm milk, 1/2 tsp sugar, 1 tsp yeast, 2 small sprinkles of salt and mix all well.
  3. Slowly start adding bit by bit the flour, like a 1/4 cup of flour then mix with your hand, and so on until you add all of the flour.
  4. At the end, the dough mustn't feel sticky at all. So if it needs more flour just add some more.
  5. The dough must be kneaded well. Cover it and put it in a warm place, like for example next to the stove.
  6. After at least 45 minutes, uncover the bowl and start preparing the pizza.

Directions for tomato sauce:
  1. In a sauce pan pour some oil and fry 1 1/2 tsp crushed garlic on a medium heat.
  2. When the garlic turns  yellow, pour 2 tbsp vinegar and stir.
  3. Add 4 tbsp tomato paste, stir then add some water and stir again.
  4. Season by salt, pepper and a sprinkle of thyme.
  5. Keep stirring until it starts boiling then remove.
  6. This sauce has to be thick!

Directions for the pizza:
  1. Start preheating your oven to 350 F!
  2. Sprinkle some flour on a counter or a table and with a rolling pin, spread the dough from both sides.
  3. Brush the pizza pan with some oil (not too much) then put the dough in it.
  4. Sprinkle some thyme on the dough.
  5. Spread the tomato sauce with a brush.
  6. First add a can of tuna (seasoned ahead with salt, pepper, 1 lemon and few drops of vinegar) all over the pizza.
  7. Add the black and green olives, mushrooms, then the tomato slices and at last the green pepper slices.
  8. If you want it vegetarian, now you're done and ready to put it in the oven.
  9. If you want cheese, you can add shredded mozzarella cheese on top, then put it in the oven.

Tip:
  • It would take about 20 minutes in oven (middle rack). Check by inserting a knife in the dough, if the knife comes out clean, then it's fully baked.
  • You can choose any kind of topping you want for your pizza!!
  • For vegetarians, or people who are fasting, you can use coffee mate (the liquid) instead of milk. If you have only the powder creamer, you can prepare it as following: Dissolve 3 tbsp creamer in 1 cup of warm water. (use only 2/3 of the cup for this dough!)

Enjoy a home made pizza!!

"White Beans Salad" (سلطة الفاصوليا)

Salads are always useful for vegetarians.
Here is a salad for bean lovers.





Ingredients needed:

1/4 kg white beans.
1/2 medium red onion.
1/2 bunch parsley.
Olive Oil.
Salt and pepper.


Directions:
  1. Boil white beans until fully cooked, then strain.
  2. Shred the 1/2 red onion.
  3. Chop 1/2 bunch parsley.
  4. Mix all previous, pour some olive oil and season with salt and pepper.
  5. You can decorate the top with some parsley leaves.

"Macaroni Salad" (سلطة المكرونة بالمايونيز)

This colorful salad is very tasty, it can be prepared next to a main grilled dish.
It's easy and doesn't take time in preparation.




Ingredients needed:

1/4 kg Rotini pasta (the one in the picture above).
Less than 1/4 cup Shredded cheddar cheese.
1/2 green pepper & 1/2 red pepper.
1 onion.
1/4 cup sliced black olives.
4 tbsp Mayonnaise (or more, according to your taste).
Corn Oil.
Salt & pepper.


Directions:
  1. Boil pasta, then rinse with water.
  2. Cut 1/2 green pepper and 1/2 red pepper into small cubes.
  3. Cut 1 small onion into small cubes then soak in water, add 1 tsp sugar and stir.
  4. After 10 minutes, pour out water and rinse onion in a strainer.
  5. In a big bowl, mix the pasta, pepper cubes, onions, black olives, mayo, 2 tbsp corn oil, shredded cheddar cheese, finally the salt and pepper.
  6. Mix everything well, then put in fridge for at least 1 hour before serving.

"Kofta Kebab" (Grilled Kofta) (كفتة مشوية)

I can promise you, that all grilled recipes are very popular for adults and children.
On top of all, is the Grilled Kofta!
This is mainly consisted of minced meat mixed with chopped onion and other herbs.





Ingredients needed:

1 lb (1/2 kg) minced beef meat mixed with some minced lamb meat.
1 bunch of parsley, chopped.
1 tsp minced garlic.
1 medium chopped onion.
Salt and Pepper.
1/2 tsp All Spice. (بهارات)
1 lemon.
1 tbsp Yogurt (Optional).


Directions:
  1. Mix the meat with the onion, garlic, and season with salt, pepper, 1/2 tsp All Spice, and 1 squeezed lemon.
  2. Chop 1 bunch parsley and mix again with the meat.
  3. Take some of the meat and put around a skewer, until you get the shape in the above picture.
  4. When you finish all your kofta, start grilling on a medium high heat grill.
  5. Keep turning them on the grill, so they don't get burned until they're fully cooked.




Tip:
  • Next to that delicious dish, you can prepare a "cucumber yogurt salad" -you'll find the recipe in our blog-, or "Tahina" (coming soon).
  • You can eat it with green salad and rice or pita bread.
  • For the young ones you can offer pasta as a side dish!

"Veal Liver" (كبدة بتلو)

Veal Liver is a common dish in Egypt.
It's also nutritious, because it's full of iron.




Ingredients needed:

Veal Liver (4 slices).
Flour.
Salt.
3/4 tsp Cumin.
1 1/2 tsp minced garlic.
1 lemon.
1 tbsp Ghee.


Directions:
  1. Rub the liver with salt and flour then rinse with cold water.
  2. Season with salt, 3/4 tsp cumin, 1 1/2 tsp minced garlic and 1 squeezed lemon.
  3. Leave in seasoning for about 1 hour.
  4. Heat 1 tbsp Ghee in a big skillet, then fry both sides of the liver on high heat.
  5. Decrease heat  to low-medium, if needed u can add very little water so it doesn't burn and have some sauce.
  6. You can check if it's done with inserting a fork in the meat.
  7. When fully cooked remove from stove.

Tip:
Some like to add an onion, cut into rings. Others like to add thin slices of a green pepper, while frying.
In that case, you would better start frying the onion and green pepper before adding the liver.
Usually when it's cooked with onion and green pepper, we cut first the liver into small cubes.

"Grilled Chicken" (فراخ مشوية)

Grilled Chicken made in a middle eastern style, gives it a special taste!
The secret here is the "Thyme" (زعتر).
It's better always to use natural onion and garlic, than the ready powder seasoning!




Ingredients needed:

1 Cornish hen (little chicken).
1 medium minced onion.
2 small garlic cloves, minced.
1 lemon.
Salt & Pepper.
3/4 tsp Thyme.
Flour.


Directions:
  1. Rub chicken with flour inside and outside, then rinse. Rub it again with salt inside and outside then rinse. Always wash chicken with cold water!
  2. Mince 1 onion, 2 small garlic cloves, squeeze 1 lemon, add salt, pepper and 3/4 tsp thyme and mix all.
  3. Season chicken with that mix from inside and outside.
  4. Leave it in seasoning for not less than 2 hours. The more you leave it in the seasoning, the more it gives a better taste at the end. Most of the time, I leave it for a whole night.
  5. Before you start grilling, you must make deep narrow cuts, close to the bones with a knife. This will make the meat cook faster.

Next to the Grilled Chicken, we can grill some vegetables like zucchini, tomatoes, and mushrooms.
A green salad would also be nice. Rice or mashed potatoes would complete the course!

"Duck" (بط)

This is a special dish which I admire.
Such an irresistable extra delicious dish!



Ingredients needed:

1 kg onions then mince it.
Raisins.
Ghee.
1 medium onion.
Salt and Pepper.
1 orange.
1 lemon.
1 tbsp tomato paste.
Oil.
Cardamom and gum mastic. (حبهان و مستكة)


We have to prepare 2 things in order to get our dish.
First the stuffing, then the dressing.


Directions to prepare the Stuffing:
  1. Mince 1 kg of onions and fry it in 3 tbsp ghee in a skillet on medium high heat.
  2. Keep stirring until the onions become brown.
  3. At the end add some raisins (not too many), season with salt and pepper and stir again, then remove from stove.

Directions to prepare the dressing:
  1. Squeeze 1 orange, 1 lemon, add 1 tbsp tomato paste, 5 tbsp oil.
  2. Season with salt and pepper and mix all well.

Directions to cook the duck:
  1. Boil water in a big pot, add 1 onion, 3 cardamom, and 3 gum mastic. (حبهان و مستكة)
  2. Rub the duck inside outside with flour and salt, then wash with water.
  3. Stuff the duck with the minced onions.
  4. Stitch it at the neck and at the bottom.
  5. When water gets to boiling, add the duck and half cover it with the lid.
  6. It would take 1 hour on a medium heat. Remove when it's fully cooked. You can check by inserting a knife in the meat, if it still releases water out, then it's not yet fully done.
  7. Preheat the oven on 375 F.
  8. Remove Duck when it's fully cooked from pot and put in a baking dish (Pyrex) and brush it from all sides with the dressing.
  9. Put in oven uncovered and check after 15-20 minutes, if the side facing up is brownish and fried, then turn it on the other side for another 15 minutes.
  10. At last remove from oven and cut the duck in the middle from neck going down to its bottom.
  11. Get the stuffing out and put in a serving side dish. You can also put it in the middle of a big serving dish and cut the duck into 4 quarters and put the quarters around the stuffing.
Tip:
The onion stuffing gives the duck-meat a very delicious taste!
We can use the duck's soup in making "Molokheyya".

"Canneloni" (كنيلوني)

Cannelloni is an Italian dish, which is nutritious and is very tasty in the same time!
It contains eggs, milk, meat, onion, cheese and tomato sauce.




Ingredients needed:

2 cups of milk.
1 cup flour.
3 eggs.
1/4 kg minced meat.
Butter.
1 minced onion.
2 tbsp tomato paste.
Grated romano cheese.
Oil.
Salt & Pepper.


Directions:
  1. Preheat oven to 350 F.
  2. Put some oil in a sauce pan and fry the minced onion until it becomes yellow. Then add the minced meat and season with salt and pepper. Stir all on a medium heat, until the meat absorbs all its water and is fully cooked then remove from stove.
  3. In a big bowl mix the milk, eggs, flour, salt and pepper with an egg mixer or a whisker until completely blended together.
  4. In a small skillet (8") melt a very small piece of butter on low to medium heat.
  5. Then take about 7 ounces of the cannelloni mixture and fry it in the skillet on both sides. We can measure the 7 ounces with 1 cup of cappuccino or 2 small ladles. The cannelloni should be dark yellow from each side.
  6. Remove on a plate to cool down. Then take about 2 tsp of the cooked meat and put on the edge of the cannelloni and roll to close. It will be open from the 2 sides.
  7. Add the previous steps until u finish all the mixture. It would make about 9-10 pieces.
  8. Put all of the cannelloni next to each other in a baking dish, I prefer a Pyrex dish.
  9. Prepare the sauce by adding a few drops of oil in a sauce pan, add about 2 tbsp tomato paste, salt and pepper then stir. Add some water and stir again. The sauce should be thick!
  10. Pour the sauce over the whole dish, then sprinkle lots of grated romano cheese on top.
  11. Put in oven in the middle rack until the cheese on the top melts.
  12. This would take about 20 minutes.

"Sponge Cake" (كيكة إسفنجية)

A very easy recipe for a very yummy dessert.




Ingredients needed:
5 eggs.
1 tsp pure vanilla extract.
1 filled cup of powdered sugar.
2 filled cups flour.
Ghee.


Directions:
  1. Preheat oven to 350 F.
  2. Beat the eggs with vanilla on high speed.
  3. Add sugar and beat again.
  4. Lastly add flour then beat again, until all mixed well.
  5. Brush the nonstick baking dish with ghee on the bottom and on the sides.
  6. Pour in the mixture and put in oven for about 20 minutes until fully baked!
  7. Remove from oven then quickly from the dish on the serving plate and sprinkle some powdered sugar on the top.


 
Tip:

You can use the sponge cake in preparing a variety of desserts.
Use whipped cream as a middle layer in the cake.
Or add about 4 tbsp cocoa to the mixture before baking to get it in a chocolate flavor!
Decorate even with fruits or frosting!

"Chicken Negresko" (نجرسكو)

This is a very delicious dish for chicken lovers!




Ingredients needed:

1 boiled chicken.
1/4 kg Spaghetti, boiled.
6 overfilled tbsp flour.
5 cups milk.
1/4 cup grated Romano cheese.
Salt & Pepper.
Ghee.
1 Egg.


Directions for preparing the Bechamel:
  1. Add 2 tbsp Ghee in a large nonstick sauce pan.
  2. Put 6 overfilled tbsp flour.
  3. Pour 5 cups milk and stir with a nonstick whisker.
  4. Add 1/4 cup grated Romano cheese and keep stirring.
  5. Lastly add salt and pepper.
  6. Keep stirring all the time until it's all homogeneous and becomes thick.

Directions for preparing the Negresko:
  1. Preheat oven to 375 F.
  2. Boil a chicken, remove bones then cut into thin small slices.
  3. Boil pasta, then rinse with water.
  4. Put a layer of paste on the bottom of the baking dish.
  5. Pour over some of the bechamel and stir.
  6. Add then all the chicken pieces.
  7. Put the rest of the pasta over the chicken.
  8. On top, pour the rest of the bechamel.
  9. Beat 1 egg, add salt and pepper to it, then pour it over the surface of the dish.
  10. Sprinkle some breadcrumbs on top.
  11. Put in oven.
  12. It would take about 35 minutes. Remove from oven when the surface becomes golden.

"Roast Beef" (لحم روستو)

This is one the most delicious recipes!
I hope you enjoy it.


Ingredients needed:

1 eye round roast beef.
2 tbsp vinegar.
2 tsp minced garlic.
1 tbsp corn oil.
1 minced onion.
10 thin garlic cloves.
Salt, Pepper & All Spice.
1/2 tsp Cinnamon.
Natural string of cotton or linen to tie the beef.
1 additional minced onion for frying the roast beef.



Directions:
  1. Remove all the fats from the beef.
  2. With a knife, cut deep slits in the beef and bury a garlic clove. Space them evenly over the roast.
  3. Rub the beef with the mixture of 2 tbsp vinegar, 2 tsp minced garlic, 1 tbsp oil, 1 minced onion, salt, pepper, some "all spice" and lastly 1/2 tsp cinnamon.
  4. Tie the beef with the string and leave it in this seasoning for not less than 4 hours. 
  5. We add oil in a large pan and fry 1 minced onion until it becomes lightly yellow.
  6. Fry the roast beef from each side until it's lightly brown.
  7. Add water to cover at least half the roast beef and cover.
  8. You can continue cooking over the stove on medium heat, or put all in preheated oven over 375 degrees.
  9. It would take about 3 hours to cook, depending on the Beef's size.
  10. After an hour and a half, uncover and turn the beef on the other side.
  11. Check with a fork if fully cooked.


Tip:
  • Cut in thins slices after it cools down!
  • You can use remaining sauce in the pan as a gravy.
  • After 1 hour and 1/2 and while it's cooking, you can add baby carrots, baby red potatoes (unpeeled), and 2 zucchinis cut into cubes (unpeeled) to the roast beef.
